Cocktail tomatoes with basil tofu filling

pine nuts (10g)
basil leaves (25g)
clove of garlic (3g)
lemon juice (5g)
olive oil (0.85g)
black pepper (2g)
mini red tomatoes (150g)

Heat a dry pan and fry the pine nuts until they appear golden.
Then fill them in a bowl to cool them down.
Fill the pine nuts, basil leaves and garlic clove into a blender. Add lemon juice and olive oil, season with salt and pepper.
Blend the ingredients into a homogeneous mass.
Add the tofu to the blender and mix again. If the consistency of the mass should be too dry, add a little more olive oil.
Wash the tomatoes. Then you remove the upper part and hollow them out.
Fill the tomatoes with the basil-tofu mixture and serve them on a plate. Optionally you can decorate the dish with some basil leaves.
