Preheat the oven to 170 degrees Celsius / 325 degrees Fahrenheit / Gas Mark 3.
Grease the muffin mold with coconut oil.
Crack the eggs in a large bowl and season with salt, pepper and garlic spice.
Cut the peppers, the spinach and the ham into small pieces and add everything to the egg mass.
Mix everything together and pour the mass into the muffin molds.
Bake the muffins for 15 minutes.
Take the muffins out of the oven and serve on a plate.
