First, cut the apricots into equal pieces.

Put the apricots in a pan and add the water and the erythritol.

Let the mixture boil until evaporation, then set the temperature to medium level and continue cooking for 10 minutes.

Mix the gelatin powder and the lemon juice in a separate bowl and add it to the pan.

Stir everything well together and let the pan cool down.
