First you have to preheat the oven to 180 degrees Celsius / 350 degrees Fahrenheit / Gas Mark 4.

Then you wash and peel the zucchini, then you grate them on a vegetable slicer into thin, long strips.

Now heat some olive oil on a pan and add the chopped onion.

As soon as the onion appears translucent, you can add the chopped garlic and peppers, as well as the eggplant and fry the whole for 5 minutes.

Now you can add the tomatoes and season with salt, pepper and oregano. Fry the whole thing for a short time.

Now is the time to add the zucchini strips, mix everything together and fill the mixture into a baking dish.

Sprinkle the casserole with grated mozzarella (or gouda), cut the cocktail tomatoes in halves and garnish the dish with them.

Place the casserole in the oven for 10 minutes. Garnish with fresh thyme or oregano and serve.
