Preheat the oven to 180 degrees Celsius / 350 degrees Fahrenheit / Gas Mark 4.

Separate the cauliflower into florets and place them in a casserole dish.

Place the baking dish in the oven for 15-20 minutes.

In the meantime you can prepare the sauce. Cut the onion into cubes and heat the coconut oil in a large pan.

Fry the onion pieces in the pan.

Now add the cream and the chopped cheddar and season with salt, pepper, cayenne pepper, paprika spice and nutmeg.

Fry at low heat and stir from time to time.

Once the desired consistency of the sauce has been achieved, you can add the cauliflower florets, so that they can absorb the aroma of the sauce.

Serve on a plate and optionally garnish with fresh chives.
