First, preheat the oven to 190 degrees Celsius / 350 degrees Fahrenheit / Gas Mark 5.

Separate the cauliflower into florets.

Put the cauliflower florets and the garlic on a piece of aluminium foil.

Season the cauliflower with salt, pepper, nutmeg and olive oil.

Roll the aluminum foil up and place it in the oven for 50 minutes.

Next, fill a blender with the contents from the aluminum foil and add the cream.

Blend the mixture into a homogeneous mass.

Add the grated Parmesan and mix again.

Depending on your taste, you can season the puree with salt, pepper and nutmeg, and garnish it with parmesan pieces.

Serve as a side dish or as a single meal.
