First grate the cauliflower on a vegetable slicer.

Heat some coconut oil on a pan. Chop the onion and the garlic and fry both until the onion appears translucent.

In the meantime, you can cut the beetroots into cubes and then add them to the pan.

Now add the cauliflower rice and mix everything together.

Season with salt and pepper and continue frying.

Pour an egg into it, mix it again, and cook until the egg mixes well with the rest of the ingredients.
