Wash and cut the eggplant into 1 cm thick pieces

Heat a pan with some olive oil and fry the eggplant pieces from both sides until they turn golden.

Then take the aubergine pieces from the pan and let them cool on a paper towel.

Chop the garlic, the basil and the oregano and mix it in a large bowl with olive oil and lemon juice. Season with salt and pepper.

Wash and cut the tomato into 2cm cubes and add them to the bowl.
