Take a bowl and place it in a steam bath ( a larger bowl of hot water)

Crack open the eggs and separate the egg whites from the egg yolk. Add the lemon, yolks, and water carefully into the bowl in the steam bath.

Stir the mix vigorously. As soon as it strengthens a little in consistency, add the melted butter and continue to stir.

Now the bowl is removed from the steam bath and the sauce is seasoned with salt and pepper.

If the consistency of the sauce is too thick, any amount of water can be added.

Let the sauce cool in the fridge for a few hours.

We recommend the hollandaise sauce to serve with fish or meat.
