Preheat the oven to 175 degrees Celsius / 350 degrees Fahrenheit / Gas Mark 4.

Mix the butter, half of the erythritol, the ricotta, the vanilla extract and one egg in a bowl.

Now add the almond flour and the baking powder and mix the dough well.

Form small biscuits and place them on a baking sheet covered with baking paper.

Bake the cookies for 15 minutes. During this time you can make the glaze.

Mix 20 ml of almond milk, the rest of the erythritol and vanilla extract in a bowl.

Remove the cookies from the oven. Place on a grate and let them cool.
