Crack the eggs and separate the egg yolk from the egg white. In a bowl mix the egg yolk with the coconut flour, cocoa powder, erythritol, baking powder, almond milk and vanilla extract.

Let the butter melt (for example, in a pan or in the microwave). Then add it to the mixture and stir well.

Put the egg whites into a separate bowl and beat until stiff.

Carefully add the egg mass to the other mixture.

Heat a waffle iron, add the dough and bake until the waffle has a firm texture.

Remove the waffle from the waffle iron, serve on a plate and garnish optionally with strawberries, mint leaves and drizzle with agave syrup.
