First make coffee and pour it into a cup.

Add the solid gelatin to the hot coffee to melt. Put the cup aside to let the mass cool down.

Now pour the ricotta cheese and the vanilla extract into a bowl.

Mix both ingredients using a hand mixer. Little by little add the coffee mass and mix until a homogeneous mass is obtained.

Pour the cream into a separate bowl and whip with the hand mixer until it is stiff.

Add the whipped cream to the rest of the mixture and mix everything together.

Pour the whole mixture into small bowls and leave to rest in the refrigerator for 2 hours.

Optionally, you can garnish the mousse with grated dark chocolate and fresh fruit.
