Firstly cut the tomatoes, mushrooms, paprika and onions into small pieces.

Now heat the vegetable oil in a pan.

Whisk the eggs in a bowl with a fork until blended then add the eggs to the heated pan. Mix the eggs as they cook and as soon as the eggs begin to dry we remove them from the pan.

In the same pan, fry the mushrooms, peppers, onions and tomatoes, and then add the scrambled eggs to the pan again.

Finally season with salt and pepper to taste.
