Cut the onion into small cubes.

Heat one tsp of coconut oil in a pan and fry the onion pieces for 3 minutes until they appear soft and translucent.

Pour the fried onion pieces into a bowl.

Now add the spinach, basil leaves, dill, sunflower seeds, and whip an egg. Season with salt, pepper and mix well.

Heat the remaining coconut oil in a pan.

Using a spoon, place the mixture on the heated pan and spread it evenly.

Close the pan with a lid and fry the spinach pancake on medium heat.

As soon as it has reached the desired consistency, you can remove it from the pan and serve it on a plate.
