Heat the oven to 190 degrees Celsius / 375 degrees Fahrenheit / Gas Mark 5.

Cut the chicken breast down the side with a knife so that a kind of "sack" is created.

Heat the butter in a pan until it melts.

Fry some onion and garlic in the pan for about 3-5 minutes.

Add the spinach and fry for 2 minutes or until the moisture evaporates from the spinach.

Let the pan cool down.

Now you can mix the spinach mixture together with the ricotta, cheddar, parmesan, basil, coriander, salt and pepper in a separate bowl.

Add the filling with a spoon into the chicken breast.

Place the stuffed chicken breast in the over for 30 minutes and wait until the outside looks golden brown and inside is no longer pink. Serve with a side dish of tomato salad.
