First, the zucchini (about 250 grams) is washed and grated through a vegetable grater with large holes.

Now you place the zucchini in a strainer and salt them.

Then wait 5 minutes and then pour the zucchini into a bowl.

Now you can add the eggs, grated Parmesan and almond flour and stir the mix vigorously. Season with pepper.

Then add some coconut oil to a pan and heat it.

Then you can spoon the mix out of the bowl and place it in the pan.

When the frittatas are crispy, you can remove them from the pan.

Optionally, an avocado paste or a scoop of yoghurt can be added to these frittatas.
