First of all make the Oopsies. Separate the egg yolk from the white.

Add the egg yolk to the cream cheese and mix well.

In a separate bowl, beat the egg whites with the baking powder until stiff.

Now all ingredients are mixed in one bowl.

Cover a baking tray with baking paper and form dough circles with a ladle on it.

Finally, the Oopsies are baked in the oven for 20 minutes at 150 degrees Celsius / 300 degrees Fahrenheit / Gas Mark 2.

Now make the "Eggs Benedict". In a pot, bring some water to the boil, add apple vinegar and salt and crack an egg into the water.

Once the egg has reached a firm consistency, carefully remove it from the pot.

Now heat some olive oil in a pan and fry the bacon from both sides.

Finally prepare the Sauce Hollandaise. To do this, take a bowl and place it in a steam bath (eg into a larger bowl of hot water)

Add lemon juice and the egg yolk carefully while stirring vigorously.

Subsequently carefully mix the butter in.

Now remove the bowl from the steam bath and season with salt and pepper.

If the consistency of the sauce is too firm, any amount of water can be added until the desired consistency is obtained.

Spread the oopsies with the Sauce Hollandaise, then add bacon and the egg and garnish with some more Sauce Hollandaise and chives.
